Banana-Plum Cake
The summer is getting to an end and slowly the autumn is settling in. A subtle mood of baking makes its way and all I can think about is baking something at the edge of the summer season. Luckily this banana-plum cake is easy to make and is worth it!
This is how I got to prepare this delicious cake which brings in one plate the taste of refreshing fruit cake and the taste of fresh banana bread. With a bit of cinnamon and a sour feeling from the plums is just melting in your mouth!

Banana-Plum Cake

100 grams butter (room temperature)
120 grams brown sugar
one banana
two eggs (room temperature)
130 grams flour
12 grams baking powder
a pinch of baking soda
1/2 tsp cinnamon
Directions
Preheat oven to 180ºC (350ºF). Grease and line a square cake pan with parchment paper. Set aside.
Mix the butter together with the brown sugar
With a fork smash the banana and add it into the mixture
Add the room temperature eggs and mix
Add the dry ingredients, one cup at a time while you are mixing gently
Bake for 25-30 minutes (you might need more depending on your oven), until toothpick inserted in the center comes out mostly clean (some crumbs are OK)
